Father Sky has been blessing us all day with the pitter-patter of rain. What better time than now to bake Zucchini Carrot Muffins with my daughter, Dewa.
Yesterday, we rode our new parent/child tandem bicycle down to the Durango’s Farmer’s Market. It is a wonderful exercise in team work as we pedaled together, cuing each other about the next turn or stop. Awing over the beautiful sights in deep appreciate and loving each other without explanation within the silence… Life is Go(o)d!
At the Farmer’s Market we greet all the familiar friends and faces. Dewa gets a snake painted on her arm. Shatkti ! The carrots in our garden are but babies compared to the sweet candied carrots now harvested for sale this morning. So we buy a bunch, from which Dewa’s hand immediately goes into the bag to pick the lucky first to be eaten then and there. Next, a zucchini the size of Dewa’s arm. Only one dollar. Perfect. Homeward bound excited to start our muffins, which by the way are also filled with coconut, apples and almonds. Can we say, Yummy! The only alterations to the above linked recipe is that i used less than a cup of organic cane sugar. Plenty sweet for us.
