Spinach Staple: 10th day of giving

You know, if you stopped by during mealtime, we would most probably be having this meal. Especially valuable meal fro vegetarians. The simplicity is astounding. The dark-green, leafy nutrition is an important energetic choice. What i really love about this meal is the sound of my daughter’s “yum.”              Feel free to experiment with the seasonings.

Prep time: 20 min.  Serves 2-3

2 bunches fresh spinach

1 cube firm tofu, sliced or cubed

1/4 . ground ginger

1/4 cup yellow mustard

2 T. lite soy sauce (or Tamari)

1/2 small onion, chopped

1 T. BRAGG Liquid Aminos

1 clove garlic, chopped

1/4 cup water

1 T. Safflower Oil

2 cups cooked basmati rice

garnish: soy sauce, mustard, or BRAGG

Place tofu and oil into fry-pan. Brown both sides of tofu on high heat. Add garlic and onion. Add spinach and water than cover. When the spinach softens, add mustard, soy sauce, BRAGG’s, and ginger. You may need to add more water if spinach is drying out. Cover for one minute, stirring frequently. Garnish and serve over rice.
