Tis the Season for baking! A Holiday ritual for my daughter, Dewa, and i. They also make nice gifts for friends and loved ones. I mean, who doesn’t love a Cookie? Just ask the Cookie Monster. Though i am happy to hear that the Cookie Monster has become more wholistic in his food choices.
The key for me when i treat myself to such sweets is… follow up with some healthy fat as or with protein. This helps me stabilize my blood sugar.
Both of the below recipes are quick, easy and yummy. Enjoy!
BUCKEYES
(we choose to use organic ingredients)
1 c. peanut butter
1/4 c. butter
1 tsp. vanilla extract
1 c. confectioner’s sugar (if you want it sweeter add up to a 1/2 cup more)
1/2 c. flour
1 c. melted chocolate chips
Beat peanut butter, butter and vanilla in a bowl. Add sugar and flour until mixed. Roll dough into little balls. Dip each ball into the melted chocolate. Put on foil pater on a cookie sheet. Refrigerate for 1 hour.
MACAROONS (courtesy Rachel Turiel)
2 1/2 c. shredded, unsweetened coconut
4 egg whites (beaten)
1/4 c. flour (we use coconut flour which taste great and is Gluten Free)
1/2 c. sugar/honey (we like honey)
dash of vanilla
sprinkle of salt
Mix dry ingredients first, then add liquid, shape into balls, bake for 15-20 minutes at 325F.
